The Masala Method

मसाला चाय

What you'll need

Saucepan

Strainer

Chai glasses or cups

Mortar & pestle

A place to start

A base recipe — adjust spices to taste.

Tea

2 tsp

strong CTC works best

Water

250ml

Milk

250ml

milk or an alternative like oat

Simmer

5–8 min

How to brew

Crush spices

Cardamom, cinnamon, ginger, clove.

Boil water & spices

Add crushed spices to boiling water, simmer 2 mins.

Add tea

Strong CTC tea. Stir well.

Add milk & simmer

Equal parts milk. Simmer 3–6 more min.

Strain & serve

Into warm glasses. Add honey if desired.
