A green tea made the GABA way: sealed in a nitrogen-filled chamber for hours so the leaf builds up gamma-aminobutyric acid. Made from Jin Xuan, pan-fired to keep it green and only lightly oxidised, which is rarer than the usual GABA oolong. Candied and creamy, with toffee-apple sweetness and low bitterness.
