Anji Bai Cha (Anji White Tea)

Despite the name meaning 'Anji White Tea,' this is a green tea. The 'white' refers to the cultivar's pale, almost albino new growth, a natural mutation that reduces chlorophyll in early spring. The leaves green up as temperatures rise.
