Dong Pian · the winter sprout

The cold concentrates everything: the sweetness is more pronounced, the body lighter, the finish longer.

Dong pian, winter sprout, is the last pick of the year from Taiwan’s high mountains, harvested after the main autumn flush when the temperature drops sharply and new growth slows almost to nothing. The leaves are small and the yield is tiny, which is why these teas are scarce. A quiet end to the growing year.
