The simplest summer ritual

Cold water extracts almost none of the bitterness. Only the sweetness and the aromatics.

Gyokuro cold-brewed overnight becomes something unrecognisable from the hot version: sweeter, almost thick, with a seaweed-like depth that takes people by surprise. The technique requires nothing more than a jar and a refrigerator. The patience is the practice.
